I figured sharing a Holiday inspired recipe may keep my stress levels down and Holiday spirit up.
So the day after Christmas (or whichever Holiday you celebrate) you may find yourself with some extra eggnog and a desire for a quick yummy breakfast.
I bring you the Eggnog-Chai Breakfast Smoothie! This recipe is sure to please, the added plus is that the almond milk helps cut the calories of the eggnog without cutting the flavor. I used an eggnog made by Boathouse Farms as they had a more natural sugar ingredient in it. It was pricey but delish!
There is just one rare ingredient which is cardamom which is typically added to chai spice or chocolates. I happened to have some at home from making my own chai spiced truffles last year. And because the eggnog is so thick and creamy, I go heavy on the spice, otherwise it gets lost in the nog. If you don't want to run out and buy cardamom by it's self then get some chai tea bags and instead, simmer the eggnog and almond milk while steeping the chai tea in it. Otherwise, follow as below:
Ingredients:
1 cup eggnog
1 banana
1/2 almond milk
1 tsp cardamom
1 tsp cinnamon
1 tsp all spice
1/4 tsp nutmeg
Tools: Blender
Mix all ingredients together in the blender, then top with another dash of cinnamon and nutmeg for decoration. Yummm!
