Pulled Pork Burritos with Pineapple Salsa
My husband and I were trying to figure out what to make for dinner one evening and this just seemed like a natural solution. Pork loin was on sale, we had a pineapple to eat and lots of homemade salsa left over from the summer. I was surprised how much my husband enjoyed the spicy sweet flavor.
Ingredients:
pork loin
taco seasoning*
1 16oz jar salsa
1/2 pineapple cubed
10 medium burrito shells
Tools: BBQ grill or grill plate and crock pot
Preheat grill to med/high heat. Season pork loin with taco seasoning (see note below). Grill the pork loin until the edges are cooked and seared with the black grill lines. Place in crock pot with salsa and pineapple. Let cook for approximately 6 hours. Removed pork and shred with a fork, then place back into salsa mix.
Makes 10-12 tacos
*Taco Seasoning: We had an abundant garden last year and my husband dried his own blend of spicy peppers and onions in a food dehydrator. Prior to that we would use cumin, cayenne pepper, garlic powder, onion powder, salt and pepper.
