Mango - Peanut Butter Smoothie
Vegan, Gluten Free
Mangos were on sale at the grocery store! I cannot tell you how much I love mangos. It just seemed natural to combine it with other popular asian flavors of coconut and peanut butter. It was a marriage tryst made in heaven.
Ingredients:
2 ripe mangoes
1 can coconut milk (16oz)
2 tbsp creamy peanut butter, preferably the all natural no sugar added type.
1/4 cup water
Tools: High speed blender, sharp non-serrated knife.
How to cut a Mango:
Place the mango on it's skinny side and slice in half, skirting around the narrow pit. Cut the other "cheek" of the mango off the pit. You may end up with bits of mango on the skinny sides of the pit. Now lay the mango down and cut those pieces off. Then cut the skins off of your pieces and slice the mango.
Blend the coconut milk and peanut butter first, making sure the peanut butter blends into the milk. Then add the mangos and water. Blend until smooth and creamy.
Optional, add some gluten free whey protein powder to blend in the last step. However if you do this you must add more liquid so it's not too thick
