Leftover Chicken Salad
Someone had verbally given me a recipe for chicken breast which I royally botched up this weekend and ended up with some really dry chicken. I wasn't looking forward to eating leftovers so I decided to make it a more appealing lunch. I doubled the recipe so that it would serve more than one person.
Ingredients:
2 chicken breasts (precooked)
3-4 tbsp mayo
2 tsp lemon juice
1/4 cup white grapes halved
(fortunately I had already done that prep work with the original recipe)
1 half chopped apple (leave the skin on for color)
1 stalk of celery chopped
2 tbsp of pine nuts (or other of your choice)

Prep time: 5 minutes
Shred the chicken with a fork and knife. Lightly sprinkle the chicken with the curry seasoning. I don't measure here since curry is such a fragrant seasoning I go how much color and aroma I want in my salad. Mix in the mayo and lemon juice. Add grapes, apple, celery and pecans. Enjoy with crackers or on top of a salad.
Other serving suggestions: You can also switch out the lemon juice for dijon mustard
Also side note: the white grapes had been cooked with the chicken the night before and had a pleasant white wine flavor in them. Unfortunately I ate it all before I got to take a picture of it. It was yummy.
