Honey Grapefruit Gelatin
I'm a big fan of citrus and jello-like desserts. This is a delicious super easy dessert that combines the two. I think next time I might make a parfait out of these.
Ingredients:
3 cups of grapefruit juice (divided into 3/4, 1/4 and 2 cups)
4 tbsp of honey
2 packets of unflavored gelatin
Bring 3/4 cup of juice and honey to boil then turn off heat, stir occasionally to make sure honey melts evenly. Add the gelatin to 1/4 cup of juice and let sit for a few minutes, then as it thickens add to the hot honey-juice mix. Return to heat so it simmers 1 minute until gelatin is completely dissolved. Add the cold 2 cups of juice to the mix and pour into a container (or serving cups).
I sprinkled some sugar in the raw on top just for added texture.
Cover and store in fridge.
