Flax Seed Pudding
Flax seed pudding with blueberry smoothie and shredded coconut
Flax seed doesn't have much of a flavor so it's very versatile . I like to get creative with my flavors with this breakfast pudding. The flax seed can be easily substituted with whole chia seeds.
Ingredients:
5 tbsp ground flax seed
2 cups milk or water
1 tbsp honey or maple syrup
Optional seasonings to consider for variations :
leftover smoothie or puree fruit, fruit juice, chopped nuts, chai tea (steeped in the milk while boiling)
Bring milk to a boil, add flax seed and honey or syrup (if adding fruit puree then add at this point). Boil for 2-3 minutes, stirring often to avoid lumps. Set aside and to cool so that it can gel into a pudding and add nuts.
I prefer to have the chopped nuts into the mix of the pudding so I add it while it is still warm so it mixes in better.
If you choose to add the tea as a flavor then simmer the milk, remove from heat and steep the tea for 3-5 minutes. Return to heat and add the flax seed.
