Blueberry Hemp Powerballs
I was recently at a bike expo when I came across a vendor for an all natural energy snack. While it tasted good I figured I already had half the ingredients to make these myself at home. The one thing that I did not have was hemp seed; however a trip to the local health food store quickly fixed that. Now I've officially gone raw hippie on you.
Hemp seed offers a surprising amount of protein in such a little package. It is also high in iron, magnesium and zinc.
Chia seeds are known for providing energy and fiber.
I bring these with me on my long bike rides and they definitely provide some sustenance. The simple sugars of the fruit are easy to digest, and also provide a healthy source of fiber.
Ingredients:
16oz dried dates
1/2 cup dried blueberries
1tbsp coconut oil
2 tbsp cocoa powder
1 tbsp chia seeds
1 tbsp hemp seed
3/4 cup handful of cashews
1/4 cup raw oats
Tools: Food processor
First mix the cocoa powder, chia, hemp, cashews and oats in the food processor and set aside in a large bowl. Then mix the dates, blueberries, and coconut oil.
Dried dates are very dense and have a tendency of collecting into a ball in the food processor. Keep an eye out for this, as you don't want to burn out your processor.
Mix the dried fruit mix into the bowl with the other ingredients.
Roll out into 2 inch sized balls.
Makes about 24 powerballs.
These can be kept in the refrigerator for 2-3 weeks.
