Almond Butter
I was devastated when I realized peanut butter is pretty much off my list. But then I remembered I already know how to make almond butter and always keep almonds at hand as they are so versatile.
Ingredients:
Almonds, roasted unsalted
1 tsp Coconut oil (melted)
A pinch of salt, any you prefer
Place almonds into a food processor and get ready to sit there and press the button for a long time. You will have to occasionally open it up and stir the mix. As the almonds turn into a clumpy paste add the coconut oil and salt. Blend, blend, blend some more.
Total time should take 15 minutes. I wish I could tell you how much almonds I used, probably 1 to 1.5 cups to make the small batch you see here. I used my smaller Ninja blender and just filled it up 3/4 of the way.
